Porch Dinner

Last night I made a really easy dinner with what we had in the pantry, and it turned out very yummy - it felt light and healthy but also nice and filling.  

Chickpea and Tomato Curry

1 Tbsp vegetable oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
1 tsp ginger
1 Tbsp curry powder 
1 large pinch of coriander
1 large pinch of cayenne pepper
1 large pinch of salt
15 oz can of chick peas, drained
15 oz can of diced tomatoes or tomato sauce
freshly ground black pepper to taste

Saute onion, garlic, and spices in olive oil for 10 minutes
Add tomatoes and drained chickpeas
Bring to boil, then simmer for 10more minutes
Serve over rice or pasta
