Salad Wrap

Tzatziki sauce is my new favorite thing. I could eat it every day (especially this home made, extra-garlicky kind that Eli mixed up using the Cuisinart we got at our shower).

  • 3 cups plain greek yogurt
  • 2 small cucumbers - peeled, seeded and diced
  • 2 tablespoons olive oil
  • 1/2 lemon, juiced
  • salt and pepper to taste
  • 1 tablespoon chopped fresh dill
    • 1 tablespoon chopped fresh mint
  • 3 or 4 cloves garlic, peeled

In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, herbs and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.
